His expertise in landscaping is evident as he cultivates a variety of plants suited for Bali's two seasons - wet and dry. During the dry season, Jess grows herbs and spices for use in the restaurant and staff canteen. In the wet season, he focuses on planting long beans and spinach. Aloe vera, lemongrass, and rosemary are among the plants he tends to year-round. Jess is also working on growing microgreens, which are popular in the restaurant. </p>
